Beat the heat with this cooling respite from the blistering hot sun! Watermelons are not only lusciously sweet but packed with nutrients. Here’s a recipe that will get the kids and the biggies asking for more.
• 2 cups of watermelon (minus the seeds), chopped into bite-sized chunks
• Approximately 10 strawberries chopped
• Half a cup orange juice
• 2 teaspoons lemon juice
• 2 teaspoons honey
Put in all the ingredients in a blender and mix till smooth. Pour the smoothie in a freezer-safe vessel (glass baking dish). Place dish in freezer and allow it to freeze for 6 hours or overnight. Remove the frozen blend and allow it to stand at room temperature for 10 – 12 minutes. Break the frozen mould into lumps and put in blender. Blend the frozen lumps for 40 seconds, remove the top and stir the blend with a wooden spatula. Garnish with mint leaves and serve immediately.
