Here’s a quick recipe to make the delicious celery soup.
Things you will need: 5 tsp oil, 2 tsp butter, 1 large onion finely chopped, 6-8 celery finely chopped, 300 ml milk, 300 ml chicken stock or vegetable stock, salt and pepper powder to taste and chopped parsley to garnish.
Method: Melt the butter in a pan, add oil. Now sauté onions until they start to soften. Add celery and cook till the stalks turn soft, make sure they don’t turn brown. Once they become tender, add chicken stock or vegetable stock as per your choice, salt, pepper powder, half the milk, stir well and cook till it boils. Let the soup simmer for another 20-25 minutes. Now add the remaining milk and bring it to boil. Adjust the seasoning if needed and garnish with chopped parsley. Serve hot.
